Pumpkin Pie


How to Prepare Fresh Pumpkin Puree

You can either back or boil pumpkins to prepare the pulp for puree.

Boil Method

1. Slice open the pumpkin and cut into large chunks. Don't worry about cleaning the seeds and membrane, when the pumpkin is soft you can easily scrap them off.
2. Place the pumpkin chunks in large kettle or sauce pan and bring to boil. Lower the temperature to a low boil and cook pumpkin chunks until soft.
3. Remove chunks from water and cool slightly so you don't burn yourself when you remove the skins. Skins are easily removed when slightly cool.
4. Scrape off any remaining membrane.

Bake Method

1. Preheat oven to 325 F.
2. Slice open the pumpkin and cut into large chunks. Place chunks face up on on cookie sheet or baking pan. The seeds, membrane, and skin can be removed when pumpkin is cooked.
3. Cook pumpkin for 45 to 60 minutes or until thoroughly soft throughout.
4. Remove the membrane and skin once pumpkin has cooled.

To puree the pumpkin simply add the pulp to a food processor or blender.

Extra pureed pumpkin also freezes nicely. Place 1 to 2 cup portions in freezer bags and lay flat in freezer.
Ingredients:

* 2 cups cooked pumpkin
* 2 eggs
* 1 1/2 cups (12 ounces) condensed milk or rich cream
* 1/2 cup brown sugar
* 1/2 cup white sugar
* 1/2 tsp salt
* 1 tsp cinnamon
* 1/2 tsp ginger
* 1/4 tsp nutmeg
* 1/8 tsp cloves
* 1 9 inch unbaked deep dish pie shell

Directions:

1. Preheat oven to 425 F.
2. Blend the pumpkin and milk or rich cream together in a medium size mixing bowl
3. Mix the sugar and spices together thoroughly and stir into the pumpkin mixture
4. Slightly beat the eggs and then add to the pumpkin mixture
5. Pour into the 9 inch unbaked pie shell
6. Bake at 425 F for 15 minutes
7. Reduce heat to 350 F and bake 45 additional minutes
8. Pie is done when inserted knife comes out clean (no clinging pumpkin)
9. Cool pie on wire baking rack

Lunch Time

Last Wednesday I went to my first Jesus Folk event of the year. It was with Keefe and Lillian's small group and at the end of it, we were told to think of a question that we could ask a friend of ours...

So far, the answers I have received are in their own way, surprising and at the same time, not.

Overall though I think the results of these good heart to hearts were very very very good.

The Beginning... Again.

I have decided to DELETE all previous posts. :O I know, chill out though, I have them on file somewhere (won't tell you where muahaha... :/) but they will no longer be posted on the internet for multiple reasons... The first and foremost being that it was pretty embarrassing looking back on them. I have no desire to visit that time in history anymore and neither should anyone else.

So here we go, from the top... Again.

Today was, as always, fairly uneventful. I was woken up fairly early for me (though really I should be waking up that early everyday) by a knock on the front door and Tyler and Eric meowing my name... At least I think they were meowing... moving on.

Boys came into my room, curled up with me in bed and we sorta laid there for an hour or so. Well, Eric and I talked and discussed my wallet while Tyler slept. Then I convinced myself that it was important to get up and started on breakfast. Toad-In-A-Hole.... YUM!

Boys left, I hung out for an hour, boys came back... head to the house.

I think I was at the house twenty minutes before I got a call from Claire telling me that DANIEL was in Oly... YES!

RACED to campus with the boys to see Obi.

Saw him, left the boys with him, then went with Claire to Kohls... I FINALLY GOT AN ELECTRIC BLANKET!

I'm so cozy now. I feel so much better.

Anyway, picked up Carolyn after Kohl's then went to Latins and I got a 35lbs pumpkin... The only reason I think I got one that big was for the seeds.. :D

After latin's went to Costco then RACED back home to meet up Keefe, Shane, Zach and Alex for bible study... It was like boy's night but with me there. It was cool though and I really got to know everyone better. I'm thankful for that.

So now I'm going to either read, shower or go to bed... considering it's 12:15 a.m. It's anyone's guess as to what I'll do.
